The two most interesting EU time periods are post-ROTJ and (much more so) the Old Republic era. Interestingly, being Star Wars, the best "media" for anything outside the "saga" is anything that isn't movies or animation, so depending on what you are into, there is likely a game, comic/graphic novel or book for that continuum and time period...
KOTOR (the first one) is probably just about my favourite game ever. It is excellent. So is Jedi Knight: Jedi Academy, which came out a couple of years earlier. The first Star Wars Battlefront (and the second one, I'm told) was pretty decent, and definitely fun, too.
Comics-wise? I recommend anything from these three, in descending order: Knights of the Old Republic (same time period, but different storyline to the games), Legacy (set 100 years ABY, after the Yuuzhan Vong) and Tales of the Jedi (any of them). Tales of the Jedi is older, and much, much rarer (hence more expensive, if you can even find it, largely) and more... Dense. But it gives pretty much all the context for much of the shit that Disney has poached, since, and also which inspired KOTOR, about a decade later...
Books-wise? You need Thrawn (as we just talked about), Legacy of the Jedi, Young Jedi Knights, Splinter of the Minds Eye (the first ever EU thing, which was pitched as an alternate sequel to the original), Bane, Revan and Dark Lord: The Rise of Darth Vader, which was, I think, the first "adult" Star Wars novel I read. Oddly, the "novelisation" of the prequels is actually also much better than the original movies ended up being (for various reasons, including internal dialogue. Plus they weren't authored by Lucas himself, of course), especially for the Phantom Menace...
That should get you started and keep you going for at least a few months, depending on your mileage, lol. Feel free to ask more, if you want specific time periods/contexts, lol. There's a whole UNIVERSE out there, after all!
But seriously, I would suggest grabbing as much as you can, in physical form (Dark Horse, and of course Ebay and the like, are your best bets), before Disney quite literally "cancels" it all... I never wanted kids and never liked any kids for years. I do think the biological clock thing is legit though, as I could totally be in the mindset of maybe on the kids now. I don't really care for those ultrasound pics they always want to shove in your face. Or babies for that matter. I'm usually a bit weird around them, just I guess disinterested. The older kids always gravitate to me though, right about the time everyone else starts ignoring them for not being cute and cuddly anymore.
Have no understanding of what makes someone so angry against someone having a kid. Except I think they said it themselves, "it is a product of lifelong grooming." What is it we say about how they are always projecting?
I used to be a bit like you (but I’ve always wanted my own kids, since I, myself, was a kid), but then, some time in my… Early-mid twenties, I guess, something biologically seemed to switch, and now I’m actually pretty good with managing even the younger kids…
Like honestly, I do think it’s a “biological clock” thing, even as a male.

But I was also a very odd adolescent (I think abuse, horrific bullying and isolation, rather than, say, autism), so maybe I just… Finally grew out of that a bit? I dunno.
No one ever “taught” me how to act, around kids or anything else. So it probably took me longer to learn that most, I guess..?

I was a odd adolescent but more on the autism side. Not officially an autist and probably never was, but I was insanely shy and quiet. I think a lot just to do with the environment around me and never necessarily feeling comfortable with myself when I was school age. Was bad enough with people my own age, and there just weren't that many people notably younger than me around.
I never wanted kids and never liked any kids for years. I do think the biological clock thing is legit though, as I could totally be in the mindset of maybe on the kids now. It wouldn't be a total no-go. I'm also really close with a couple of the kids in my family now. Like I love them to the point if someone did something to them I'd be right alongside their parents killing to protect them with no thought of the consequences. Being that a few years ago I wouldn't have even given them 5 minutes of my time, it's certainly a change.
