I think part of it is it's antithetical to their view of men as emotionally inferior when they can have close friendships without the drama and backstabbing of female friendships.

No it's definitely real. Garak comes off like a genuine sexual predator in his first few appearances. He was actually trying to play him as a flaming homo, which he evidently saw as monsters, and he still thought it was a good thing.

I never saw it but growing up I rarely saw anything gay related and my only exposure to lgbt was knowing it existed. Personally never saw them as anything but friends. Haven’t heard his interviews like you have but no surprise he would say this.
I saw his relationship with Bashir as entirely non-sexual, but assumed Garak himself had grown to position himself as sexually ambiguous for espionage reasons. I don't think Garak would have had a sexual relationship with a non Cardassian of either gender.
Perhaps but it's ultimately up to the writers to dictate what is canon or more specifically, it's up to whoever is paying the writers. Not the actors and actresses so his opinion as an actor means nothing. Like you pointed out, his opinion should be taken with less than a grain of salt.

T3 and even Salvation are fine, canonwise. You can nitpick about certain things and you'll be right, but they at least TRIED to respect the overall story and themes. Salvation, while flawed, finally gave us a full story within the post judgment day future.
Anything after that I don't consider canon at all. They had to destroy entire movies worth of timeline just so they can have their grrlboss say "come with me if you wanna live"
The way I see it is that because both the resistance and skynet are constantly fucking with the timeline, each film exists within its own little continuity bubble, and the next film is free to ignore parts of the previous films.
We can all laugh at this, but the reality is that building and maintaining a social circle isn't as easy as it once was. It requires genuine effort and a little bit of luck these days, and if it ever slips away entirely one can be effectively crippled. The fact that society is in such a shape where this can be a regular occurrence rather than a wild and unheard of aberration is frankly horrific.
I recognized this phenomenon years ago and now make a conscious effort within my own sphere to try and drag people out of their houses to come be sociable with a group of other people in the hopes that we can all build and maintain some of those social bonds that are so important and increasingly hard to find.
It really does bother me, how quickly people these days accept retcons and new media that doesn't line up with old stories. If you don't care about consistency, then why care about anything?

and the inclusion and chronology of A Link to the Past is up for debate.
