One of the many things I love about that film is how absurd it is for the protag driving what is basically a dinky human car when there are things bordering on interstellar spaceships in size right beside him, and still losing to him!
Everything about that anime is cheating and so fucking good.
I remember finishing it and feeling like I had overloaded on visual stimuli. It was an entirely novel experience to be that visually overloaded for such a sustained length of time. 10/10, would overdose on god tier animation again.

This scene early on always cracks me up. It just packs so many jokes in one after another, without ruining anything.
My favorite lately is Daddy Daddy Do! by Mayazuki Suzuki, the opening for Kaguya Sama Love is War. It's an excellent example of an older genre of music and just about everything that old dude does absolutely slaps.
If you want a real bop, Ya Boy Kongming's OP, https://www.youtube.com/watch?v=gNn9NxZH2Vo "Chitty chitty ban ban", is super catchey for a semi-recent piece. It's more pop-rock than punk-rock, but still a solid song.
And for a curveball, Eden Of The East's Western release lost the use of Oasis as a band for their OP, so they got generic jpop in the west, and western rock in the East, which is a shame because it actually works really well, IMO. EDs are trickier, I don't often watch them. So... Dango Daikazoku, from Clannad. Because it's cute, calming, and effective as an ED.
I've never been a huge weeb, so my frame of reference for OPs is rather lacking.
That being said, I really enjoy Nichijou's opening. it's got the kind of strong melody and beat I like to listen to, and it captures the mundane/surreal insanity of the show really well.
The 2 opening songs for Ghost in the Shell: Stand Alone Complex. They stand out particularly because they aren't sung in Japanese and occasional Engrish, but rather in Russian with Latin and English peppered in. Furthermore, it is Industrial sounding music (or is it dance club music? idk), which makes it stand out even more among other anime openers. The singer for these songs (RIP) has other material you could check out if you end up liking these.

Sure its no hellsing but the pacing wasnt that bad, animes like recincarnated as a slime are way too slow and have way too many meeting scenes etc. But I also sit through the bookworm anime which had 3 seasons I think and liked that a lot. Not sure anymore if I complained once about shiki pacing. Thats more than a year ago then.

Bravin' Bad Brew is an amazingly good OP for a literal forgotten series that no one but me watched because of how garbage it was.
