I once tried food from a black restaurant because I was curious. Fried chicken, mashed potatoes, and mac and cheese. Everything was over salted, like holy shit. Only thing saltier I ever tasted when I bought a pie and whoever baked it obviously used cups of salt instead of sugar. To this day I'm not sure if that's how they really eat or if they did it to spite me because I was white, but goddamn.

So, it makes sense that less intelligent peoples would over season their food, and think our food, by comparison tastes bland.

It's to cover up the taste of rancidity, decay and putrification. Most of them never discovered a way to preserve fresh meat that spoils rapidly in warmer climates. Since protein was difficult to come by they learned how to make rotten meat more palatable by heavily seasoning it.
That tends to happen when your ingredients are rotten, fly infested literal garbage.

This shows a serious historical illiteracy for a game which claims to be 'authentically medieval'. Medieval foods in Europe were HEAVILY spiced (not necessarily 'spicy' in the modern meaning). In fact if you follow medieval recipes today they tend to be quite offputting to a modern European palette because they overladen the dishes with sweet, savoury, and spicy combinations that we're not used to. Venison or pork stuffed with raisins, cloves, garlic & mace, glazed with honey as an example.

I don't think I appreciated Chaucer enough when I was forced to study it back in school. This makes for extremely cosy and comedic reading now. You're right though, there's plenty of seasoning there and 'powdour douce' itself is apparently a spice mix of its own, like seasoning salt.

Well perhaps I've given a bad example there, but there's definitely some unusual flavour combinations going on at a medieval banquet, to a modern tongue at least.
Garlic, wild garlic, snake garlic, garlic mustard, dried mushrooms, juniper berries, horseradish, young hops, thymus, thyme, wild mustard, mint, dill, Saint Barbara's herb, rumex. hogweed (we slavs love our food to be both salty and sour), urtica, wild parsley, angelica, pimpinella, cuckoopint, pennycress... All those and many, many more were used in Slavic cuisine at that time. Yes, we didn't have all those 'fancy' spices, but thanks to that our food to this day has a 'different' taste than what you can find in restaurants in western countries (and I fkn love it).
