I used to just check White and that was it. Now I will mark other and list my predominant cultural heritage English and Norwegian. Do you think this is a mistake? Should I be broader and say European heritage? Should I just mark the White box?

I'd probably just put Native American. I was born here, and my family has been here long enough I'm not eligible for birthright citizenship anywhere else.

The government asks if you're American Indian, which has a specific meaning (to them). Now, this is all self-identification, so you can say what you want, but you're probably not an American Indian.
If something actually says "Native American", well, that's dumb; check which box you want.
I honestly don't know a better term than American Indian. Canada's term is dumb because the tribes that are recognized weren't the First Nations, obviously. They were the last ones before white people got there. Should be called Last Nations. We already covered Native American. Maybe Bering Strait-American. Bering Land-Bridge American. That at least makes sense.

That's a good question. I feel like when people talk about being white, they talk about like there's no culture behind it. So I started adding the more specific English and Norwegian bits to add a deeper meaning to white.
And it seems to me that a lot of the SJW types regard Europe as monoculture with everyone being the same. And a part of me feels pointing out different heritages is an attempt to pull away from that idea of Europe as a monoculture.
I'm also just proud of my English and Norwegian roots.
I mean the term White is pretty meaningless if you think about it. It's a term to describe the physical appearance of people with European ancestry but it doesn't actually tell you anything about the person besides their basic physical appearance. Same goes for Black or Asian. So it's a good thing to get specific.

I've heard the term Heritage American get tossed around in recent years, which I kind of like for how it reinforces the reality that America is a nation of European bloodlines.

I am largely opportunistic about this. If I think marking White will hinder my opportunities I'll decline to answer or mark "other". Otherwise I'll just list myself as White. I have to imagine though that there are people out there who will see that box for "White" checked and heave a sigh of relief that the guy they're interviewing isn't going to be another knuckle-dragger.
If you're hitting upon the point that observed races are not particularly accurate proxies for ancestry, it is well taken.
That said, you're white. A lot of people get crammed into white. Persians are white unless you come up with some special category for them. Probably Arabs are white. They aren't Sub Saharan African or East Asian.
So being "different parts of Europe" white isn't even pushing it.
