I’d have a Skyrim adventure and then a Ringworld adventure, choose your own adventure type story, hard boiled detective story with a beautiful girl Friday, go visit that female hospital/castle from Monty Python’s Holy Grail for purely informational purposes, and then be a cop in a Martian Colony. Then if I have time be a crew member in a Star Trek like exploration or do a Sliders type adventure

I'd make a very convincing matrix-like waking-up-from-the-simulation simulator. Then make some generic fantasy game as a cover. Then invite another person to see my cool fantasy game and tell them about how I've been experimenting with having the deck generate new particles or brain interface or something. At some point I'd duck out and replace myself with a hologram. Then the fantasy game "glitches out" and the wake-up-from-the-simulation starts. Then they're locked in the holodeck for a week believing that their whole life up until that point was a simulation and the holodeck experiment crashed it somehow and now they can't go back.

You still have to move your own body on the holodeck. You'd look like the starwars kid with a bunch of extras waiting their turn to fall down.
If he's the only one there, he holodeck could just "move" everything else to simulate "force-jumps" or whatever impossible physical feat he was attempting. And with a little more work it could push him around for flips and whatnot.

I've done a couple runs with casting as my primary skillset and it can work but you'll want mods. Apocalypse spells round out each school pretty thoroughly on their own but it works even better with the same guy's perk tree overhaul(I forget the name now). Beyond that maybe a simple mod to make Destruction damage scale with skill, but I think the perk tree mod already accomplishes that, so that's more for if you don't want to break the perk tree but still want scaling damage.
Have you ever read what their original plan for the magic school was? Really cool. There is a mod that restores the original civil war which is much more fun but much more in depth.
Be an eldritch horror lurking near a small, rural japanese village, brutally murdering invading gimmiegrants and destroying the carcasses. I'd play a long running fantasy of mine by visiting our founders time and try my hand at making a few big course corrections such as having all the slaves sent back with great fanfare and sincere apologies, and the merchants who brought them in the first place forever banned from the Americas.
I would get letters of marque and reprisal on the heads of anyone known to be involved in private equity lending at governmental levels.
I would get the founders to understand that while their Electoral College system is brilliant, it needs to be also applied at the state level and I would get them to understand that the FPTP election process will lead to disaster.

Honestly? Using its historical databases as foundation, I'd probably spend a week with it going over numerous potential futures, from long-term economic recession/depression to outright government collapse, civil war, and anarchy. Maybe a few hours of fun here and there, but I want the best shot that me and mine will survive well into the future.

But if I were to use it, while I would engage in some degeneracy in all likelihood, the temptation would be too present, I'd mostly use it for practical purposes: I craft stuff, but I mostly use cheap materials because the cost of failure is too rough for me. Using high-end stuff and testing how it works out, and able to go "holodeck, simulate one week passing, one year passing, one decade passing" and seeing how it works out as a completed product would be fantastic.
If at all possible, I'd also see if it's one of those REALLY advanced holodecks and try to overclock my own brain, make one real-world second be like a standard "feels like" minute or hour in the deck, for more usage.

A crash course in trauma surgery. Battlefield medical training. Explosives construction from easily available ingredients. Fabrication of shaped charges using hydro-forming of steel.
Then I would move onto training that requires equipment that I can't afford. I would start with precision rifle shooting. With the cost of ammo it is easy enough to go through several thousand bucks a day.
