I'm of the opinion that if they wanted to do an action girl, they should have brought in Daisy, have her be super competent athletically, dumber than a hammer, and an all around complete doofus. It would have satisfied their need for an action girl, limited her in such a way that she doesn't outshine the lead, and in character with the (largely fan assigned ) personality people expect her to have.
Peach doesn't have much of a personality in the main games, but we do know her first reaction to danger should be either "Oh, my!" Or to yell Mario's name. And to basically always act as a princess.

When he was in the campaign trail, I thought to myself, "He's functioning at about the same level as grandma." Now grandma, at that point was in a retirement home due to her Alzheimer's, but the thing was, you wouldn't notice it at first. Grandma, like Joe, was always creative and good at speaking, and could make something up with enough coherence to hide the fact that she couldn't follow the conversation or remember the events in question. This, combined with her natural disposition as a dottery old lady allowed her to hide her condition for quite a while, and portray a better state of health than the truth of reality. I wouldn't be surprised if the truth of the situation with Joe is much the same, and what we don't see is far worse.

I don't know, her sheer strangeness, and "sense of humour" already elevates her above a significant chunk of boring white bread streamers with cut and paste personalities.
I wouldn't say she's a great streamer, but she's at least middling, has a unique hook, and has managed to remain endearing. That, combined with her ability to work every day without breaks, and the impossibility of irl drama torpedoing her popularity, I wouldn't be surprised if that's enough to carry her for a significant length of time, provided she isn't banned for stumbling too close to forbidden topics again.
I've been getting recommended clips from her for a while now. Most of the entertainment value is in watching her fumble regular human interaction in a way that is just coherent enough to keep the idea that she's understanding what's going on but doesn't, get how a human is supposed to feel about it.
There's a very real possibility that it would get less interesting if she got smarter.

I'm not really opposed to the concept of magical boys, but I think they should look more "princely" or something. If they had given him pants and combined the mini jacket and skirt into a fancy coat thing, the design would be far more masculine, but still fitting the cure theme. The Ponytail and earrings are a bit much, but forgivable.
The real test will be how he's used in the show. Often this type of character will be used in a slightly comedic fashion by having a female character design act like a hormonal teenage boy or otherwise try to become more masculine, or be totally confused by the fact that everyone thinks they are a girl when they are so obviously a boy.
Or we could get the whole true girl's heart nonsense.
Or we could get none of that and just have a dude who helps his friends and doesn't care that the magical transformation is feminine looking because it helps him punch bad guys.

Try a different model. Models are improving all the time, so grab something newer. Also use a model specially trained for realism. A mixed model produces less consistent results, which can be very unsettling in a realistic style.
Change up your prompt, include details about the features, that your chosen model tends to get lazy with. Even something as simple as "nice skin" can go a long way in making her less plastic looking.
Red and yellow originally had a good, "Mean guy, Dumb guy / boke tsukkome" dynamic that is seen in various comic relief duos in many types of media. Unfortunately, it doesn't work anymore because in left wing influenced media, having a character be mean without either the character being openly evil, or a minority dressing down a white man, is a big no no. So they made red less mean, yellow less dumb, and added a bunch of side characters, and none of them have much in the way of personality.
Seconding this. Jellyfin is harder to set up, but worth the investment of learning to avoid Plex pushing it's ecosystem on you, and having greater control over the behaviour of servers that you own and should have the right to do whatever you want with.
