Canada - increasingly awful mandates and restrictions. France, Italy, Germany - vaccine passports and masks. Japan - separating children and mothers, and forcibly quarantining them separately...
And you already know about China, and South Africa, and New Zealand, Australia, and of course the US, so I don't feel the need to go over all those shitholes again.
What scares me, though, is the COMPLETE LACK OF ACTUAL RESISTANCE to all of this, except for France, Germany and the UK, and even then it has achieved fuck all...

Cheap terms have also helped this "white supremecist," "fascist," antimask," "antivaxx" so people whose lives were/are being destroyed didn't stand up.
Now a significant portion of the population wants the other dead. No longer able to speak, have a job, go outside, or actually remain alive.
If France has significant and unrelenting push-back, it may stop there. Protesters still need to work to earn money, while the government can just take, so it's easier for them to hold out. If you bring in foreign enforcement (which has happened), it's also easier to dehumanize protesters. In countries that are more subservient, it won't end, and many citizens have likely already been convinced to go after their fellow man.
People are still comfortable now. They have a lot to lose. Before, all it took to start a revolution is the end of bread rationing. Those people lived death everyday. Most had no home or a shared hovel. This gave them a sense of shared suffering, which fostered a community. Right now, most people don't know or despise their neighbors to the point they'd call the secret police if it meant an uninterrupted night's sleep.
But don't worry. The water is beginning to boil. See, they spotted something that even the complacent frogs aren't willing to tolerate, their kids.

Part of the reason you aren't seeing it in the US, is the places most likely in the US to revolt aren't really experiencing any of this.
I'm metro-adjacent in Texas, everything is open, everyone is out, masks aren't common, kids aren't wearing them to school, I don't know of anyone asking for vaccine proof yet, etc. I have not really personally experienced peak clown world in 4 months now. The world wide Covid lockdowns created bottlenecks in manufacturing which are leading to shortages all over the place, which is creating scarcity of lots of products. Putting people out of work and on unemployment for a year also created a habit, and now those people don't want to work, which is creating labor shortages, which is also creating bottlenecks and shortages, and strains on the system where people are over worked and under paid, forcing the few altruists left out, which can break a company or industry quite fast when this hits full speed. It all seems wargamed and planned from the top, because this stuff was predicted in the conspiracy theory forums.
It got this bad because the west had good foundations, traditions, philosophies, etc. which enabled it to reach the success it has. However, with success comes opulence, abundance of wealth, lack of adversity, and relative peace, which in turn creates weak bonds in the communities that used to be strong. People feel they don't need each other any more, so now people don't interact or care for one another (at least much less than should be the norm in a healthy community), and thus won't arise when their neighbors are attacked. The success of the west also enabled it to forget and abandon the traditions that made it strong in the first place, replacing them with perversions and easy lies.
We're in the downward trend of the rise and fall of civilizations. What leads next is misery, violence, balkanization around strongholds as society splinters and reforms, and possibly total collapse and war. It depends on the situation and details.

I know what you mean. I don't cheer on violence, it would be a disaster if widespread violence erupted, but I continue to be extremely disappointed in people's willingness to go along with all this. Resistance needs to happen, nonviolent preferred, but it needs to happen. People need to make a stand.
Shame culture and threat of ostracism make people do crazy things.
Give people sex, entertainment and peanuts, and there will be no resistance. We need to crush that comfort and make everyone feel it.
That's the crux of the issue, the only thing that will always make a sufficiently determined authoritarian elite second guess their power tripping is the potential threat of bodily harm. They're not terrified of being fined or fired, they have money and connections to spare and can still live comfortably in their safety net waiting for another chance to grab power, but a lynch mob is final. Those in authority threaten violence all the time, like sending the army to make sure no-one's being too social. Unilateral threats of violence are always a sure sign of oppression.
The old saying is that death is the great equalizer, and so, by extension is violence. Reason without violence will always lose to violence without reason. A man can choose to ignore reason or empathy (at least temporarily), but you can't choose to ignore being killed no matter how unreasonable their justification. But that wouldn't happen if you just knock out whoever intends you physical harm. Only reason backed, either directly or by third party, by a capacity for violence can hope to survive in a world where physically smashing someone's skull is a far quicker way to change someone's mind than a rational discussion. If you intend to truly hold onto any convictions in life, you have to be ready protect them from violence. And against some violence the only possible solution is more effective oppositional violence, at least demonstrated if not enacted.
Violence in a stable society is like a mutual nuclear deterrent, using it is a terrible circumstance for all concerned, but openly saying you won't use it even if provoked is inevitably inviting something far worse. That's not to say you have to make specific statements that in a burgeoning but not-quite-finished police state might cause you unnecessary trouble. Just now is not the time to further normalize pacifism when society at large has already forgotten the personal cost and necessities behind protecting what you value as good in the world and people's freedom from tyranny. Even ambiguity serves a better purpose rather than willingly toeing their line.
