I'm guessing the term originated with the human traffickers themselves as a euphemism. "The coyotes will help you across the desert," sounds better than, "Juan is going to stuff you in this trunk and rape you across the desert."

To me, the colloquialism is "I'm going to eat your child out of your womb and leave you for dead." I grew up watching the critters kill laboring cows, though. Still seems pretty apt.
And I once listened to a guy actually brag about how his cousin raped a goat to death because he was angry at his (the goat's) owner. But I'm not allowed to accuse all humans of that race/ethnicity of being goat-fuckers. EVEN THOUGH THEY PROBABLY ARE.
