That is just the emergency brake failing horribly as it should have tripped the moment it noticed it going in reverse or faster than normal operations. This can all be blamed on bad management trying to save money by cutting maintenance
The video is only using footage of the Toyota mirai an fcev instead of an ice. I have driven a mirai before and they are fun cars. And in terms of fuelling they are quite cheap as well as hydrogen can be made from all kinds of sources.

Yep. Most of the time it is done to reset your mind as being stuck because you tend to get stuck in a certain way of thinking when you get stuck on a single problem for a couple of hours. Just reset for 30 min and you can go continue with a fresh look at it. More efficient than staying stuck for 6 hours and then solving it in 10 min the next day.
It is an ideal test item as not a whole lot of people want to be the test subject of an remote surgical robot just for a demonstration (though I know that we have a batch of ideal human test subjects that would otherwise be wood chipper waste).
