Its also just basic Southern staples. Like the majority of "black culture" things, its just repackaged stuff that everyone in the South does, and the rest of the country just assumes its super special black people stuff because White Southerners only exist to be racist and feed on evil and have no culture of their own.
Because the most common element is that these are poor people food. The poor negro throwing all the slop from his table to make a po'boy is in the exact same predicament as the poor coonass or hillbilly throwing slop into a pot to make a gumbo.
If they weren't confined to the urban jungle these days and incapable of surviving without the government, they would still be raising chickens. It's just a good idea in general. See: Mexicans.
Im willing to bet that a free range "homegrown" chicken is better for you too than the factory farm chemical/drug filled ones. Probably taste much better too.
