I will say I ran into a case (probably the only one) where having the fucking pronouns would've been handy. I was having to email someone at a different place named Soul. Silly me I wrote that email as Ms. ______. It was embarrassing when I got an email correcting me but, easy fix, I just apologized and we went on with our business, no muss no fuss.

The store I run is in is a pretty small town in a less cosmopolitan part of the country, so you don't see too much of that nonsense locally, but all of the corporate higher-ups are based in Toronto, and I definitely see pronouns in e-mails that come down from them. Almost exclusively she/her.
Defense against woke culture: this is like the grocer in Havel. Yes, you're signaling that you're afraid and therefore unquestioningly obedient, and that you therefore should be left alone. But this is hardly a reason to celebrate.
Reaffirmation: normal people, honestly, do not need any such thing. If people with foreign names that are not readily recognizable as male or female don't do it, there is no excuse for the Johns and Janes to do so.

I haven't seen more than once or twice. I think both were marketing or HR types. Engineering people I work with don't tend to worry about nice signatures. I don't sell things I don't need to encourage people to contact me

I've only ever seen it from people in the UK, and I think even then they were NHS employees (they also used a "social justice focused" file hosting service whose name I can't remember, in case you wanted to know such things existed) and not employees of the place I was working at at the time. No unconventional.
That employer was also full of woke politics, diversity quotas, celebrated Floydmas and Juneteenth; so I'm not sure to what extent it correlates with what is now "baseline" levels of corporate wokeness. Perhaps it works as an indicator for the outliers, where if you see them you know you're probably not going to last very long as a normal person.
Hell, our Git repo still has a "master" branch, which I'm silently surprised about. But I work with a bunch of Indians and Chinese, so I guess they haven't gotten around to caring yet. And the company is so paranoid about IT security that no one who would care has access.
I do not work in a formal environment so I typically use their name and if using their name is awkward I just say you/yours where reasonable. There is almost never a time where I would have to refer to someone with a pronoun when talking to that person.
I never see the unusual ones. The she/her stuff is either by hr, or the extreme wokies. Significant number of people do not use sigs at all where I work. It’s redundant. you clearly have my email. We don’t have company phones and we don’t have fax machines. My name is in the email. So email sigs are only used to virtue signal as far as I care.
