I saw the same thing watching cable TV when I was visiting family for Christmas. A really visible trope I saw was the white man being incompetent or messing up and the black man or white woman coming in to save the day with w/e was being advertised.

The Super Bowl is considered THE commercial spot to have. Completely independent of the sport itself, its assumed that even if someone doesn't watch the game they will see the best commercials either by word of mouth or repeated by other websites. There is a reason why they are considered so special, its because of how valued they are even if the demographics aimed for have nothing to do with football. Shit that's why the Halftime shows are also always so completely at ends with the demographic who watch football.
In that way, its almost a better sample than any other. Because places that wouldn't buy commercials to begin with sometimes buy them here, and often they are the highest production quality and effort of any that will be made. Meaning its a stronger insight into companies than some of the more throwaway ads meant for background cable noise.
From the sounds of it, he isn't American. Sometimes its hard for them to properly understand our culture around the NFL, just like few of us understand shit that goes on around Soccer.
I can tell you the Golf channel ads are pretty diverse. The professional playing field is pretty diverse as well, because golfers from all over come to make the big bucks in the PGA, but YOUR golf course, yeah...
For Hispanic representation, it's important to remember that they have entire networks in the Spanish language. I'm guessing you see quite a few Latinos in their ads, though they do seem to prefer white ones.
