In your example the person who shot you did so under the assumption they were following the law while you were just being a complete idiot, in the other example the person knew damn well that what they were doing was a crime and then did it completely of their own volition. In your mind is it entrapment if a cop stands around undercover in an area that is known for having a high number of mugging reports and then arrests anyone who attempts to mug them? Your argument is the same as those idiots that upload clips of movies and TV shows on youtube and then scream "IT'S FAIR USE" when they get a copyright strike. That's not how Fair Use works just as how this is not how entrapment works.
Entrapment is a LEGAL term with over 120 years of precedent, you can't just say everything you want to be entrapment is entrapment, that's not how the law works. Entrapment specifically requires police to instigate someone to commit illegal activity, if your definition were correct then literally EVERY SINGLE sting operation would be illegal.
This isn't entrapment. I'll use prostitution as an example: entrapment would be an undercover cop going up to a prostitute and hiring them only to arrest them after they agreed or an undercover cop going up to random people and soliciting sex for money only to arrest anyone who bites, THIS, however, is more like an undercover officer hanging around a known prostitute hot spot and waiting to see if anyone comes up to them and tries to "buy their services".
Basically, if a cop initiates contact then it's entrapment, if the other party does then it's not. Cops just walking around and then arresting people who stare at them would NOT meet the legal definition of entrapment, although it would be (in the US at least) a MASSIVE violation of their rights for other more obvious reasons.
This isn't actually entrapment. Think of this in terms of prostitution: this is the same as a cop standing around looking like a prostitute and then arresting anyone who attempts to hire her, whereas entrapment would be a cop going up to prostitutes and attempting to hire them and then arresting them once they agree. Entrapment requires that the cop directly influences you to commit a crime, whereas this is just a cop standing around and watching to see if a crime gets committed.
Or even just be sympathetic with the people wanting the release, if he had said something like "I know it's disappointing, but the evidence we have in the Epstein case does not implicate anyone else", sure plenty of people (like myself) wouldn't believe it, or at least would only be willing to believe that the files were destroyed or tampered with, but no one (besides the usual suspects) would blame Trump over it. His whole "If you want the Epstein files released then you're a traitor and I spurn you!!!" is just making it seem like he's trying to cover something up.

The payment processors have doing this for years (in AMERICA not just Japan), it's only NOW gotten so much attention because Steam and Itch didn't sugar coat why they were censoring and straight up blamed them. The child safety acts are just the latest attempts by the US government to control the internet, past attempts failed (either through Supreme Court intervention or through threat of being voted out of office) but recent state legislation (which the Supreme Court foolishly or maliciously upheld) has given them a foot in the door and they fully intend to ride the momentum and abuse it as far as they can. Youtube doing this is because these companies WANT to steal your info (either to sell it or to gather as much data on you as possible) and recent legislation from EVERY country has given them the excuse they need to push forward.
This has been building for YEARS and many of us have been calling it out and doing what could be reasonably done EVERY STEP OF THE WAY, but FAR too many people have been content to ignore us the whole time, usually branding us as "degenerates", "gooners", and "porn addicts" solely because we understood that porn was always going to be the entryway tyrants would use to take control.
Maybe if more people had listened to us things wouldn't have escalated to this point.

I think a lot of SJWs are just starting to realize that this is a losing issue for them and so you're starting to see some soft backpedaling in order to test the waters and appear more centrist and reasonable than they really are. After all, the right has 2 main advantages right now, immigration and trans ideology. If they backpedal on these 2 issues than the normies WILL come back, despite what people on this site will tell you.
