They could have done that, sure.
They also could have gone the manga route and just do a bunch of self-contained episodes using the characters. Cowboy Bebeop lends itself extremely well to that kind of story telling and you could pretty much do anything.
Imagine the writing and effects from Firefly but in the Cowboy Bebop universe. We could have had that.
You could, but isn't it so much better to have your head repeatedly smashed with the social justice sledgehammer. I can't think of anything better, after all thinking is bad. The media told me so.
Budget for a full anime series. Reanimated all the scenes for 8K wide screen using the original audio. Re-release.

Verhoeven did that on accident, what's more. He repeatedly admitted to never having read the book.

At least Starship Troopers, for not being faithful to the source, was a fun movie. That's why it's a cult hit; that's what cult hits are: movies that by rights should be terrible but that are so fun that it doesn't matter.

It looked awful in every way, except maybe the CG of the ships.
Here's how easy this was: look at the original show, see how the shots and scenes were framed, how the characters look and dress, how they talk and act and move, the editing, score, tone, and pacing.
Then do that in live-action.
Literally the easiest movie to make from a creative standpoint and instead it looks like some shit some amateur fans put together for YouTube.

I read The Disaster Artist. It was one of the most baffling story ever.

Adaptation is just like translation: a flimsy pretext for ideologues to alter and/or destroy popular culture. These people always claim "changes must be made" in order to bring this or that media into a different language or medium, but that's just the motte. The bailey is using a popular property as a platform for either the narcissism or activism (or both) of the people doing the adaptation/translation.
Wheel of Time has proven this beyond a shadow of a doubt. One of the authors consulted on the show and tried to fight the massive changes. He even pointed to pre-existing scenes in the books that would cover any "problems" in adaptaying for television. He was ignored by the show runners time and time again.
Jokes on them. I watched it and didn’t hate it. Enjoyed it for what it was.
