Even as someone that was dead set on getting it (started it up last night, even streamed), I'm shocked. I didn't expect it to perform THAT much better.
I played the demo and I thought it was shit. The cutscenes are absolutely torturous and unskippable. The guy who is talking to you all the time sounds like he was voiced by microsoft sam. I immediately felt like I was going to puke from the amount of camera shake.
The gameplay focuses heavily on countering in response to an enemy attack color. There are three color/counter combinations, white/parry, yellow/dodge, blue/blink. The timing on this shit made absolutely no sense until I figured out that the game is basically guitar hero with a wonky skin.
You don't want to dodge pre-emptively so that your lady would actually have time to get out of the way - no - you want to hit dodge the exact millisecond the attack hits you like the whole world is a timing indicator. Even with this understanding, the yellow attacks are all over the place because first there's a flash to warn you, then there's a random delay between 0.5 and 2 seconds before the attack actually hits and you need to press the button.
You can't really interpret what the enemies are going to do because they're all randomly assembled bug blobs that do some bullshit backflip whip arm animation for an attack. I guess if your head is empty you could memorize the frame data on all this but I'd rather not.
Normally you can run around quickly, but when you're in some types of combat, you locked on and can only slowly side step. This is great when the boss jumps 500 miles away and shoots lightning artillery at you and you try to run away using the muscle memory from the rest of the game only to find out you can't do that in this particular room.
The boss does some bullshit. He jumps up in the air and the camera follows him completely - I guess he's the main character now - your lady goes completely out of frame so you have no idea when to press X B or A to not die.
Dark Souls and Guitar Hero have ruined video games. Everything is just a timing bar and a stamina meter now, with graphics that require a Dramamine prescription.

once you get the double dodge 2 seconds into the game you dont need to dodge perfectly just double dodge
you dont need to prefect block either as long as your not being to aggressive and let your shield recover and the perfect block timing is so forgiving you can perfect block half the time by sheer luck

and the game is not a souls like whatsoever it doesnt even have a stamina meter if anything its closer to something like devil may cry or sekiro and no im not some young kid with great reflexes im almost 40 you want easy games then go play on story difficulty

This is the annoying thing about the Soulslike craze for me. The visual indicators often don't make sense. It comes off as contrived.
Well that is the difference between a well made Soulslike and a shit clone. The good ones have tight hit boxes and properly moving out of the way will equally protect you as the iframe will, while the shit ones require you to abuse the iframes tightly because the hitboxes are the size of a semi truck and the attacks weren't designed to look real.
That difference is one of the big reasons why people hated Dark Souls 2 on release, and unfortunately it seems to be the "foundation" that most clones build off of.
The PS5 had a lot of games that people were genuinely interested in but couldn't afford (or didn't want to waste the money on) the whole console because it never instilled confidence that it would be worth the investment, which is how all prior consoles sold themselves.
So when you finally release those games, and then add modding support, they consistently perform.

I recall playing the demo too and going, oh, this is it huh? Really goes to show how adding nice eye candy can boost an otherwise mid game.
If Stellar Blade released in the mid-2000s it would have been totally forgettable.

This game has tons of free content after the release too, even the two paid DLC's weren't just money grabs, they actually put some effort to it.
