Meh. Running by the logic they are going with, this isn't out of character for the actual Samurai class (obviously they wouldn't be hanging out in armor, but still). You couldn't just be a peasant and ignore the presence of the Samurai walking around. They were effectively the elites of a very hierarchical system and you were required to treat them as better than you.
Except they wouldn't have made a lowly slave a fucking Samurai in the first place.

In a situation where he is an actual samurai (well aware he wasnt) they would have bowed to him, because he was a samurai, and because the Japanese for essentially all of their history have typically been a rule-following type of people

Probably, I'd bet that it might also depend on how much of a fucking psycho the samurai was. As such, this might convey that Yasuke is a classist asshole.
I posit that if the character had been asian or white (same thing, I know) that they would NOT have put the bowing into the game because that would've been offensive and punching down.
I posit the ONLY reason they put it in the game was specifically because the character was black. Regardless of historical precedent.
