What I don’t understand is that when I was growing up liberals were fond of saying “if you don’t like it then don’t watch or listen”. Not sure why they feel the need to shout people down

Leftism is a philosophy of War. They are engaging in a Melian Dialogue. Their rhetoric is not one of compromise or persuasion, it is one of rhetorical warfare. So long as they can trick you into saying yes once, then they will accept that as unlimited consent to any further actions or attacks.
There were more ""conservative"" (read: Evangelical or Neo-Con) establishments at one time, most of those are now dead, burried, or fully subverted. It was during that time when they co-opted the term "Liberal" and when they seized control over 1st Amendment protests.
They always seek to subvert and seize any argument that is tactically useful to them at a given moment. It's not about principles, it's about power. Principles don't guarantee you power, only defeating your enemies does.

I completely disagree. Conservatives don't seem to feel vindicated by anything. And they don't seem to value victimhood. That's mostly just the Left.
That's a good explanation for why conservative student groups continually try to express their political opinions in the face of hysterical leftist classmates. Either that or they still hold out hope for a return to intellectual freedom, which used to be the condition of student bodies.
College faculty have always been petty little tyrants who rage at any threats to their little fiefdoms, but this leftist hysteria on the part of students is a fairly recent thing. From around 1980 until around 2010, leftist agitators were a minority relegated to posting flyers on campus billboards. It's like people yearned for the SDS days and made idiotic demonstrations a part of the college experience, like Freshman Orientation Week.
I think it's mostly to show they're not cowed, and to show fellow conservatives that they're not alone.

American colleges are a lost cause. Any conservatives trying to express their ideas will get the same. I wouldn't be surprised that extra credit for rioting is offered by the enlightened professors of critical studies. Still, I have to admire conservative student groups for giving it the old college try.
