Martin is actually a perfect symbol of what the writing world has become, from fantasy and sci-fi, to highbrow "Literary Fiction." I say replace every artist with AI. AI will at least do what it is told without shoehorning a political message into it. I have less than zero pity for anyone in the arts being made obsolete. It couldn't happen to a more useless group of people.

There are no currently existing models that would match the quality demanded of an illustrated ASOIAF book. An artist could use them to speed up the process, though. That looks like what happened here, except he got really lazy and let the AI do 90% of the work.
