Problem is, using the Uk dictionary causes you to use the incorrect spelling of words like aluminum, color, etc.

It definitely isn’t only Apple… pretty much every mainstream media corporation does this now.
And it's stuck into the modern lexicon. I believe whatever journalists use as their guideline for how they're supposed to write things completely changed their writing code during the June riots to capitalize black.
It's the same guidelines journalists use to capitalize stuff like Navy vs navy - there was a period of time where it was written as "navy" even if it was reference to the military branch, I think.
Hopefully this will go the way of "Latinx" terminology
Sadly even at my relatively conservative college campus theyre still trying to force "LatinX", The Hispanic club for some reasons calls themselves the LatinX club.
Lemme guess, most of the proud Latinxes in the club were born in the USA and never spent more than a week at a time anywhere south of El Paso.

Last apple phone I owned was an used 4s, looks and feels good but damn if that wasn't a shit phone. Bad connection and data issues all the time, went LG and never looked back.
If you need another reason to stop using Apple phones. The guy took two brand new iphone 13 and switched screens and other components between the two and the phone disabled and restricted features. Making at home / 3rd party repairs impossible.
Google is just as left wing as Apple If you update Gboard I bet its dictionary will have that added.
