She's probably eating what she has been told is healthy food, just enough to feed a family of 7 on a daily basis while "exercising" means doing Wii Sports for 5 minutes between fruit platters.
Junk studies take a specific compound, isolate it, concentrate it, then feed it to rats and make a claim afterwards. It’s not realistic nor worthy of being taken seriously in terms of structuring human diets.
I'm somewhat sympathetic about how the majority of our food supply is straight up poison and that people are told to consume said poison as a healthy decision. They're still overeating and doing everything wrong, but the general advice floating around in society is going to lead most people down the wrong path by default and that does need to be addressed.
I actually had to argue with someone around Christmas that no, in fact, pumpkin pie was not healthy. The claim being that it's pumpkin and the only calories were in the crust. Certainly not any problem to eat the immense amounts of sugar in it, right?
I actually probably eat at least somewhat healthy, very picky about ingredients and processing. I don't want to brag or make claims I can't back up so I'm not trying to claim I'm perfect. That said, I hate salad. I'm not eating disgusting raw leaves. The notion that healthy eating means salad is bullshit. Maybe if you get all your calories out of the a zillion pounds of leaves you have to eat. It's just a delivery method for a bunch of unhealthy toppings that makes them think they are being healthy.

A lot of salads also aren't healthy thanks to anti nutrients which prevent your body from absorbing vitamins and minerals properly.

When she says eat well, she means she gets a small ice cappucino frappe instead of a large. Or a medium.
She gets salad with her 1200 calories burger instead of fries. Then feels bad about not having fries and eats a bag of chips anyway.
When she says she exercice - she goes to the gym once per week for a few months here and there.
