Its honestly dumber than that. Disney has this weird "everything is canon" fixation. So they had to come up with a reason why coca cola was there and make a canon story around it. Then they were like "every day at galaxy edge is one canon day that repeats itself."
Thats why the overpriced hotel they shut down was this weirdly curated 3 day event where everything was full immersion. Like dude, a dad that just dropped 10k for his family to go to this place for 3 days doesn't want some bartender to be in character when he wants to pound whiskey shots when he realizes how much overtime hes going to need to do to pay off the trip.
