The thing that clued me into it was how I found amateur voice actors and male voice actors to be a mixed bag, but professional voice actresses were this consistent glossy professional style of terribleness. Put this way, this is god tier voice work, this is great and this is above average. The better actress in the last one for the blonde chick is multilingual and VAs the same character in the original Japanese.
It shouldn't feel like a standout when an English VA puts some passion behind their lines meanwhile in the original versions you sometimes swear that the VAs are suffering traumatic experiences for their parts (remembers Goblin Slayer).
I agree subs can be just as bad at times but sometimes they seem to get some digs in to, think it was In another world with my smartphone that had a line saying she'd rather have a closeted pervert than a feminist for a master because the former can control themselves.
I feel like there is a growing resentment of foreigners messing with their culture in Japan, they can identify the ones that truly love their culture and they're happy with them (I notice YouTubers like Chris Broad get a pass easily) but that idiot they have locked up is showing they're done with the rest now, regardless of the US forcing the legislature to change laws.
Dont get me wrong, I am absolutely agreeing that there is a huge discrepancy. I am probably have just been lucky in that most I have listened to for dubs have actually been at least good. There are plenty I still watch sub over dub (like you said, Goblin Slayer is much better in Japanese). It is just that on average I will take dub over sub because I would rather be watching what is going on instead of trying to read the subtitles. Sometimes stuff didnt get a dub, or sometimes the dub is an absolute trainwreck, and I will watch subs then. But if there seems to be no real difference in quality to me (like Rising of the Shield Hero), then I will take dub.
Just for my own example, Kayuga-sama I think is better as dub than sub, but a lot of the changes in tone and extra lines on the part of the narrator were changes signed off on by the studio so it is still staying true to the vision (and the over the top nature fits the anime more, IMO).
