What really happened was the introduction of the horse and the firearm. Before the Europeans came, natives had yet to invent animal husbandry and had to hunt bison on foot using primitive tools. The Europeans showed them how to ride a horse and gave them guns, which was basically doomsday for the bison. Hunting increased exponentially and they were all but wiped out.
Europeans hunting them too was certainly part of it, but it wasn't some evil intentional act to over hunt and waste like "historians" claim (without any evidence). Make a predator too strong and the prey will get wiped out. That's just the way of things.

It's probably the opposite. Disease killed too many plains indians so the population skyrocketed and then crashed. Their predator wasn't made too strong; it was almost wiped out. When whites show up you could walk on the back of Bison from Canada to Mexico without ever touching the ground. No amount of hunting by whites or indians would bring those numbers down if they were sustainable; they just weren't sustainable.
