If you post in a public telegram channel indeed you cannot expect privacy. Private chats however are encrypted end to end, which is not to say a dedicated adversary cannot get them, only that they cannot get them from Telegram. The endpoint, as always, is the weak link and an attacker with control of the network and device still can leverage that but that is beyond what a company can control.

Where to next?
Just stick with Signal for now. When they make an invasive or idiotic change to their codebase you'll know. There will be a lot of pissed off people.
