Can't confirm if it works with Witcher 3, but for other GoG games you can install w. Galaxy if you want, then just go to the install folder and make a shortcut direct to the game executable. That will bypass Galaxy when you open the game.
You...could have just downloaded the installer files from GOG's website. No need to use the stupid Galaxy program. I certainly don't.
