Can't confirm if it works with Witcher 3, but for other GoG games you can install w. Galaxy if you want, then just go to the install folder and make a shortcut direct to the game executable. That will bypass Galaxy when you open the game.

it works for classical GOG games but withcer 3 was the exception since it was their first AAA title
