Even fig trees are productive after 10 years, they're one of the longest to mature. Olive trees are producing in 3-5 years, and 'stable' after 10. There are many small groves and some have indeed been around for decades. Once they get too old they are cut down. Same as the past 2000 years.
Olive trees "can produce" for a long time, but their output is greatly diminished after a certain time. Just like wine-grapes! After a fixed number of years they get pulled up & new ones are planted.
Also: you go and plant something on someone else's property? Guess what, they have every right to cut it down.
