Now, nobody knows anybody. When a new family moves in (or, more often than not, a childless couple), nobody introduces themselves. Nobody even learns eachother's names through any means other than mis-delivered mail.
In regulated industry something called a "risk analysis" is performed where hazards are identified, and each is assigned a "probability of occurrence" and a "severity of harm". If the combined value of those two things is unacceptably high, one tries to reduce the probability or severity (or both), with the understanding that it isn't possible to eliminate either entirely and there will be what is called a "residual risk" that is considered acceptable.
This is a situation where I think everyone worried about such things needs to sit down and think about all the things that can go wrong (eg. Carrington Event, where every electromagnetic system not specifically radiation hardened will fail), try to assess how likely they think that is to occur, what will happen to them personally if it does, and make the decision as to what constitutes an acceptable risk. And if some hazard presents an unacceptable risk, attempt to decrease the probability or severity. This I think is the general mindset people need to adopt.
Even though the Amish and Mennonites are well situated to handle a severe breakdown in civilization, they probably aren't well situated if it (eg.) declines to the point where Mexican-style cartels start to appear and militarized cartel violence starts to occur. Or (eg.) State-sanctioned land seizures using militarized enforcement agents. So even for them there are limits to what hazards they would be able to handle.
Re: food and grocery stores, I drive past a good half-dozen farms just on my way to the nearest highway that will sell meat, eggs, milk, etc... Some local farms sell "shares" (usually quarters, halves, and wholes) of beef and pork which is something I need to seriously look into. I generally buy things at the store because it's more convenient, but it's not the only option. Of course then the question becomes "do these farms produce enough food to be the sole source for the surrounding population?" and they might not but also might be enough to bootstrap the population while they attempt to increase the food supply.
Power is an issue, but I think the more likely outcome there is our grid reliability degrades to that of the third-world: functional but with frequent (and maybe periodic such as at night) outages. Perhaps it's something like on Pitcairn Island, where they simply shut the generator off from the hours of 10pm to 6am.
Like acp said, it will be organized groups who are most resilient. I expect rural far-right militias to endure they best. Many of these have risen from the ashes of neoliberal economic ruin so for them and their small towns, the collapse already happened, and they are already accustomed to the hard living that comes with it. You won't see much of an online presence from them, especially on normie internet like YouTube. They've gotten better at keeping low profiles in recent years.

Prepping does not mean stockpiling, it means having the knowledge, ability, and supplies to exist off the grid. In Australia Solar Power is ubiquitous. I have a 150w panel I take camping - it charges all my phones,tablets etc - I have a massive library of pirated content that will take years to work through. Electricity, food and water aren't issues for me. But what is , is medicine, especially Insulin. I have 6 month stock pile but after that would rely on trading and if worse comes to worst - theft. The chemists/pharmacies will be the first hit during the apocalypse. Learning Bush Tucker can alleviate some of the problems - like pain relief, wound healing etc . the other thing that is hard to stockpile these days is petrol - you'll need a shelf life additive as they deliberately let it decay nowadays.
Ethanol is an optional mix at most petrol stations here. Generally there's diesel, 2 or 3 grades of petrol, LPG (liquid petroleum gas) and the the 10% ethanol mix.
I'm still trying to convince my wife that we'd be better off in the country in case of emergency. She thinks strength in numbers. (like if you need your neighbor to rescue you from flooding)

My plan is to simply join up with an allied insurgent group so that I can participate in the civil war against the Canadian government, and if that fails then I will just flee if I get rejected or we lose.
Only drawback is that if I am not rejected then I would have likely committed nasty and vile atrocities against the regressive left, globalist conspirators, and government loyalists, meaning I would be a wanted war criminal facing life or even the death penalty and would have to either go into hiding as an illegal immigrant or find a country that will accept me and reject extradition demands.
If we were to win however, my plan is to pardon ourselves of any atrocities that were not committed against innocent civilians and declare all surviving enemies outlaws, terminating their human rights and legal protections and marking them all for death. Accidental civilian deaths will be dealt with in a non interfering manner.
My own personal idea of escape is quite a literal one: buy a decent-sized catamaran, get enough solar/wind power and batteries as is feasible, then disappear.
Set up a little greenhouse, get some fishing gear and install a watermaker on board. Dock for trade wherever is safe.
Join a church, build a relationship with your neighbors doubly so if they are rednecks
