I believe Macs have an easy setting to turn off system updates, or configure it to download but not automatically install them.
In Windows you can "Delay update for 7 days" or install a third party tool that might stop working after the next update.
My PC rebooted itself in the middle of playing Fallout 4 when I hadn't saved for like an hour. Almost put my fist through the monitor.
