But I was talking more along the lines of using opensource apps for communication as opposed to apps that can only be downloaded from the apple store like iPhones are forced to do.

No, rooting isn't difficult. If you can read step-by-step instructions, you can root any phone easily. I've done it many times. Yes, I'm very familiar with computers and operating systems. No, you don't need intimate knowledge of computers or operating systems to make it work.

I always root my phone, since it's my phone. Rooting doesn't make it buggy. Once it's rooted you can install a custom ROM. ROMs overwrite the OS that came on your phone. They have all sorts of purposes, like removing carrier bloatware apps, getting more frequent updates, removing as much of Googles framework as they can get away with, etc. Some are very stable, like Lineage OS, and get regular updates. Others are thrown together by people who don't really know what they are doing.
LineageOS or it's fork Resurrection Remix have always been favorites of mine. You oil don't know what you're doing, it can cause major issues that are not easily fixed.

I already ditched most social media months ago, particularly those things that would be very easy for a normal person to connect to me. Facebook was all I had left and I've got the account still, but I never use it and there's nothing even close I've ever posted or liked to being damning.
I've been doing a lot of re-working of my network setup. This is more to prepare for aggressive censorship versus trying to hide from the man though. I want to be able to force some devices to the VPN at all times while allowing others free access to the Internet, etc. Things like that. All doable I just have to finish. I don't do this stuff everyday so it's a bit to learn to figure out.
I do want to find an e-mail alternative. I've had my own domain for years now that I use for e-mail but at the moment I just forward the different aliases it to free big tech email boxes. Years ago I operated some mail servers for clients, but I haven't been in that field since about 2008 and things have changed a ton so I'm not going to try something like that.

Yeah that's my main goal is just to separate general web-browsing and opinion forum from the rest of the world. I grew up on the Internet before social media so the whole concept of communicating with all my friends publically as myself with my real name has always seemed ridiculous. I do love forums like this though. Anywhere that free thought is shared respectfully and anonymously.
All my tech skills are super rusty. I used computers and tech to make money from about age 13 until I got through college. Then I totally quit so everything I know is stuck in about 2008.

Hasn't really changed much over time as far as the server itself (linux, dovecot, postfix) is concerned IMHO.
One of the more important things for new features is a good domain registrar. Some only let you set basic stuff like the server IP (i.e. the A record) and that's it. For a mail server you want more advanced settings (e.g. MX, TXT records and maybe others).

You need to source a device with no connection to yourself and Tor through random wifi if you want a chance at anonymous internet anything, but then you need a third party to handle data storage so your messages will probably be read. You could leave a server in a closet that no one will notice, but Aaron Swartz discovered those risks.
