there is literally just two, skyrim the 32 bit edition which is no longer sold on steam
and Skyrim special edition, the AE (anniversary edition) is simply a "DLC" for the special edition which grants you access to PAID MODS which were vinchenzo'd from actual free mods like T Cowl of Nocturnal (which is a great DLC-sized Mod)
i had skyrim SE on my library a long time ago since you automatically get a free upgrade if you owned the original (and i bought the original under a deep discount)
the AE update (which is required by many modpacks) is like 9 euros on instant gaming
as for modpacks... it depends how powerful your machine and your preferance, if you like just vanilla+ get legends of the Frost (70GB)
if you like Skyrim but with sexy NPC's and NSFW elements (like full blown sex scenes) get Telsera (180GB) [lightest NSFW modpack]
if you want to RAPE your machine to the fullest extent get Nolvus (500 GB+) which has an auto-install feature still requires you to have Nexus Premium but that's a given for all options
there is also Loreim which 550 GB to 650 GB and is one of the most immersive of the bunch, will absolutely rape the engine (took me full blown 3 mintues to load a new game on a nand SSD)
and yes i've installed each and every one of them and can confirm they work out of the box with no need to fidle around the setting (2 4TB SSD's) but i'll be brutally honest
i prefer Vanilla+ with a few quest tweaks, DLC sized adventure-quest mods and overall quality of life improvements
anime style combat or doll-face NPC character faces kinda takes out the immersion of the game (despite its age, you can totally play enjoy vanilla skyrim with no mods, like for real its still fun)

Skyrim VR does have some merit if you're using a treadmill like device and a bow/crossbow knick-knack device to simulate shooting
but the Nintendo port is retarded, any goy with more than 2 IQ's to rub together will simply get a steam deck and play the steam version with mods from wabbajack (i can confirm it works)
And a separate not joke reply here, because there's a second dude in the comments asking about good modpack setups. I'm not looking to play skyrim in the next couple of months, but it is on my list to revist this year.
A vanilla+ experience like Frost sounds like a great baseline. I don't need the graphics to be cutting edge and don't need a sex sim inside my murder sim, but anything that could be stapled on to add quests, items, areas, etc that fit a vanilla plus type of experience would be welcome.

the Author himself is a pretty based and you have multiple TND quests to kill orcs, sand niggers (redguards) and savages (Forsworn) accompanied by very racist dialogue like "sand rats" for the redguards
i won't spoil it any further but the king also employs a turbo racist sub-faction which literally exists to hunt blacks (orcs/redguards)
there are also ultra mature themes which you can disable or enable at the start of your quest
i choose enable because i'm a gigachad gamer who isn't afraid of a little rape and child abuse themes in certain quests (i'm talking like Berserk tier) so you know you're in for a fun ride

Modded skyrim is the baseline experience, since mods make it fucking payable at all.

There are multiple community patches that get released for EVERY creation engine game, fixing basic shit like script limitations, memory leaks, etc.
