So, a) those aren't Mormons B) they're probably doing it to thumb their noses at Mormons. Since the state, and most of the Rocky Mountain states actually, were founded by Mormons, the counter culture is very against the faiths culture.
Utah tends to be stuck in the 80's, so those rebelling against it dress like rebels from the 80's. It's weird, and hilarious. True story, Las Vegas used to be a military base and Mormon farming area. The strip was nothing but farmland and it confused people there why anyone would want to buy all that useless land. When you get a few blocks away from the strip you see the Utah and antiUtah culture everywhere. The Mormons were building a temple in the city and the antiUtah people said it had to be a casino.
The faith itself often contradicts the culture so I have to point out they're different. Mormons don't drink coke, while the faith itself has Dr Pepper in it's cafeterias for faculty to enjoy. Everyone asked me when my ancestors crossed the plains. I had to explain I am from Germany and took one.
I've worked and lived in those areas and it's always a bizarre thing to talk about. SLC is definitely the antiUtah culture a block away from the temple.

They like hot cocoa as well. They actually had a cultural debate if Chocolate was against the rules because it has caffeine in it.
Yeah, I was a visiting professor at a uni in Utah and saw the soda fountains. It made me laugh a bit, and then another prof had to explain.
