You could, but they are also words outside of races. Words that denote color, of which that color is the skin of the people they are describing traditionally. This is unique to black/white because almost all other races are primarily referred to by a proper proper noun like Hispanic, Asian, Arab, etc. Whereas very few people use yellow or brown to the same extent, though brown does get some usage.
And you are right its not completely accurate (though I've met plenty of charcoal black blacks), but that's because its a traditional label. Our ancestors used it, and that's just what we inherited.
