I think people call them white because they literally are. The problem with Word Games is that people who aren't involved will use literal definitions, while everyone else squabbles over implications.

There are identifiable genetic groups like Caucasian, Mongoloid, Negroid, and Australoid, but that's not precisely the same thing as white. For instance, most American blacks are about 1/3 Caucasian, but we don't quibble about them being black. Nature doesn't care about our classifications, however well they do or do not match genetics. That is what the lefties have right. White/black/Hispanic are figments of our imagination, but that doesn't mean we're all the same.

Wherein "racial categories" aren't just a definable thing, but a morally assigned grouping where they can be the bad stuff and the good stuff on whichever places they want. Its why they don't want to be White, because they've made white a bad thing to be.
