His uncle was not flying any plane, he was a passenger; the plane was not "shot down", it crashed due to engine failure and it sank into the Pacific Ocean.
Unless there were aquatic cannibals I'm not aware of, this sounds like another Crazy Uncle Joe tall tale.
It's a typical trait of this kind of dementia. There's a nugget of truth to the story, but they're making up most of the details on the fly, because they can't remember any of them. If they are a good enough storyteller, they might keep it coherent enough to avoid appearing as far gone as they really are.
I can't imagine how bad this will get if they force Biden through for another four years.

The media-factcheck industrial complex will go to town on the smallest hyperbole and exagerration of Trump's but Biden can repeatedly say things that are verifiably false and never get called on it.

Almost certainly not, given that’s where the Battle of Kokoda was fought, and I don’t recall any mention whatsoever of cannibals in that context.

My dad visited New Guinea in the 1970s. There were still cannibals in the highlands then. Heck, there were costal cannibals, who raided villages in boats.
There are probably still people who consume human flesh in the mountain highlands now, but only as part of funeral rituals or similar.
According to Jared Diamond those people still run through their family trees to find a reason to NOT kill a stranger they happen to meet in the jungle.
I remember reading an article on the matter not that many years ago, and the tribals were lamenting that the missionaries didn't let them eat people any more (beyond possibly the "cultural and beautiful funerary rites" that involve eating a bit of Mom or Dad when they die), with the usual "but it tastes so GOOD" moan.

It tastes something like pork. Cannibals keep diaries and recorded the taste. Sailors used to call it Long Pig.
In the highlands meat is pretty hard to get. The locals mostly eat taro and sweet potato, both of which are starchy root vegetables.
There is local meat in the jungle but it is mostly birds which are small and annoying to hunt.
The locals all raise pigs, which are expensive. Every family has a couple pigs, and they teach them to come when called for feeding.
Once or twice a year each family will kill their pig and have a party. Without refrigeration the pig must be eaten right away. Weddings are super expensive and involve a lot of pork.
As a result the locals are fairly protein starved. In the highlands they have been this way for evolutionary periods. It is to the point that they get sick if they eat too much meat.
When a stranger wanders in to a foreign territory, one of the first thigs that the locals think is: "Free protein!"
This has been slowly changing through access to canned meats (Spam, etc) and missionaries teaching such foreign concepts such as empathy and restraint.
