I think that was the case, remembering how much Rex aged after the Clone Wars..
Though it might've ALSO been beyond wanting to be a father, Jango KNEW of the control chips so also knew having his son start as a child avoided that risk.

In any respect, the accelerated aging, rigid imprinting for training and honestly being a dad if you remember how Jango interacts with his son was why he had Boba as a child.

Yeah. In the books it is mentioned. It is also mentioned that they needed to keep Jango around because the DNA deteriorates and they needed him for new batches.
