Obviously, it's the bronze age. That's always going to be part of it when each tribe & city has their own primary god. But the point is that Ba'al and Yahweh were competing over recruits. That's why Ba'al is seen as subversive. It's why Yahweh punishes jews that strayed from Yahweh and worshiped Ba'al or built shrines/temples to him.
You asked me why jews chose Yahweh over Ba'al. As in, since jews could make a choice in who to worship, why chose one over another? Simply saying that the Isralites and Cannanites are different ethnocultures doesn't answer your question.
One could safely assume that the Jewish ethnoculture had a lot to do with their choice of religion, no?
That's why the majority of Israelites were worshipers of Yahweh. That's not a choice, they're born into the religion of their ancestors, and raised by their parents in it. If someone never makes a choice to worship Ba'al, and worships Yahweh their whole life, that doesn't address your question of why someone would choose one over another.
If you ask me why a Dane would chose to worship Jesus rather than Mohammed, to tell you that Denmark is Christian isn't an answer.
The whole point, in fact the point of why Ba'al is considered a demon, is because there were plenty of jews that were choosing to worship Ba'al. Including Israelite kings. Your question is addressing why that choice is being made, not what an Israelite would have been pre-disposed to by birthright.

It might be different if someone from one ethnicity was raised in a different ethno-culture that wasn't there own. But if we're talking about the Israelites in the Bronze Age, that would be quite rare, or they were a slave to someone in that other ethnic group, or they were a bastard to someone in that other ethnic group.
If you're standing here saying: "the environment you are raised in is the environment you are informed by" then that is just a truism. Why ask me why the Israelites would be choosing Ba'al over Yahweh or vice versa?
