You vastly overestimate Israel's capabilities. The whole reason the ceasefire is happening is because the IDF couldn't muster enough manpower to occupy Gaza City. If you want to completely genocide people, you have to be able to take and hold territory, and the IDF reached its limit for that and stalled out.
You don't need manpower if you just shell it into rubble.
That's extremely expensive, inefficient, and ineffective, especially since Hamas has a vast network of tunnels. And while Israel may seem to have an infinite ammo cheat since they mooch off the US, the US has its own material restraints in production capacity.
You do realize that the damage you see in Gaza isn't just from bombs, right? They've been in there with bulldozers and demo crews. You need a ground push to do that.
