We just know he called himself John. He could have been using a nom de plume. And Paul was a Roman citizen so some did have Jewish names
Paul was a Jew... his name was Saul, as you know.
As for John, leaving aside the couldas, the weight of the evidence is that he was an ethnic Jew - like all the other authors of the New Testament.
