Where I'm from, your boss accessing your work e-mail without permission is a serious crime, let alone your personal mail. This sounds very dodgy even by the standards of Tennessee.
Companies like that usually put some sort of clause in their employment contract that allows them to access anything on their company PCs.

The only way they would’ve been able to see the email is if he was running his personal email app on his work computer and it downloaded the message or he read the message on web browser.
