I went with a QNAP TS1079 Pro. I had a couple of their six bay units before that (639 and 659 I think, it's been a while). They have all been great. It has been several years since I looked into it, so I'm not exactly up to date on the state of the art. I do remember that there were several different manufacturers offering similar products, so you have plenty of options.

I've just got so much stuff accumulated from over the years that storing it all on the tower feels like it's not going to be sustainable for too much longer since consumer drive capacity seems to have completely capped out at 8TB and hasn't budged for years.

Anything with good reviews should hopefully work for you. I would recommend going with more bays if you can afford it, since it will minimize the percentage of your capacity dedicated to parity (3 disks = 33.3% parity, 10 disks = 10% parity).
Also, the smallest drive in the array will determine the size of the volume, so try to keep them all to the same size if possible. If you can't, you can later hot swap larger drives in place of smaller ones (one at a time! Let it rebuild after each swap), but the volume will only expand after the smallest drive has been swapped out.
It will be an expensive bit of kit when you are done, but it is totally worth it. Good luck!
