I have yet to watch Gundam so I’m happy to get into the old stuff
I haven't seen that one yet but I heard it was depressing and supposed to be really good.
I still need to finish Gundam 79 so I can see other series in the UC timeline.
I have heard good things about both 0080 and 08 MS team.
Looking forward to eventually getting to them.

Good news is we all have so many good completed Gundam series to watch then any one person likely has time for.
My personal favorites:
G Gundam is a very fun to watch action oriented standalone series.
Gundam Wing is an dated yet still good serious standalone series.
Gundam Iron Blooded Orphans is a good depressing standalone series.
The main Gundam series is called the Universal Century Timeline and it also has so many good series.
I recently saw the first chronological entry in the UC timeline called Mobile Suit The Origin and it was an excellent series which focused on various political themes such as the horrors of war, experimental technology, manufactured consent fostering the rise of authoritarianism

I can't miss an opportunity to recommend watching G Gundam.
The show has the most outlandish meme mobile suit designs from Tequila Gundam with a sombrero to Nether Gundam with windmills on its chest.
You even get to see a horse piloting a mobile suit!
All the other series I recommended are much more serious and very worthy of checking out but G Gundam has a special place in my heart for being the first Gundam series I ever watched.
It's probably a common source of influencing a latex fetish, the moment the co-lead woman has to fight in a Gundam herself.

Follow all these recommendations, and once you've seen a good chunk of them, watch Build Fighters and Build Divers. Extremely fun "battle simulation game" setting, but requires a decent amount of knowledge of the franchise to understand when they're making a very specific franchise joke.
