If I were asked to come up with a biological theory about that, I'd say it's because the White tribes have a lot of visible variety within themselves that the other races don't have. That is, a community of stone-age whites would have seen people around them with all kinds of different colour hair and eyes. Everyone else? Black hair. Brown eyes. Every last one.
So when it came to meeting others, they'd be a little more accepting and willing to try to talk to anyone willing to try to trade.
I like to speculate that there's also a modicum of "I don't care what that guy looks like because we need him to pitch in and help if any of us are going to make it through the winter", but I don't know if that actually holds up to scrutiny since Europe wasn't the only place with harsh winters.
I mean, any group who spends a biologically relevant amount of time in high latitudes will naturally become pale. And with how superficial the term white is, that basically makes "white" and "acestors survived many harsh winters" synonymous.
I always thought the northerly need for survival was the real origin of Christmas (Yuletide) gift-giving, actually. People too proud to take charity just might come up with a holiday at the winter solstice that involves trading gifts that you know certain neighbours need to get them by through the winter, because you know everyone in town, are related to most of 'em, and actually give a shit about them surviving to the spring. Isn't that what the decorated trees were for? Leaving anonymous gifts under? Usually I just remember seeing the "gifts of the magi to jesus" getting the credit, BUT if that were the case, we'd just be sacrificing incense and money. Oh, and it would explain the origin of making the gifts more or less anonymous (crediting them to "santa", as it later evolved into.)
It's possibly less shaped by the exposure to physical diversity of white people, more shaped by the environment that lead to those features in the first place.
Surviving the colder, less sunny climates in the pre-industrial world generally meant a harsher fight against nature but less over-crowding competition with other humans. Unlike the more plentiful environments at the time, nature was still more dangerous than your fellow man. So it's quite possible that just as communities with the lighest pigmentation thrived and spread over time, simply due to better vitamin D. So too might those with a highly cooperative and altruistic average nature, being better able pool resources and survive without communal damage to their protections caused by infighting.
