The problem with that joke is that the saying is not "money is the root of all evil". The actual saying is "the desire for money is the root of all evil".

It's like how "blood is thicker than water" is such a bastardization of "the blood of the covenant is thicker than the water of the womb" that it means the literal opposite of the actual saying.
