Most performance capture overhauls for even a couple of scenes can take anywhere between three to six months depending on the complexity of the scene and whether or not there is gameplay involved. They have to resync audio, resync pathfinding, modify facial capture, and adjust, bug fix, and test any accompanying gameplay.
They already had all of the scripting done back in 2018 and were implementing and tuning gameplay around the script from then onward (based on the footage from the leaked builds).
A delay from August to May is only nine months. If I had to guess they aren't overhauling anything, just further polishing and testing what's already there and delaying for the extra stability. You also have to minus three months for logistical certification and going gold, so that technically only leaves them with six months of additional work. That's literally just bug fixing and QA testing.
Whatever wokeness was implemented in the game is going to stay in the game.
