It's fucking brilliant. When you're poor as shit, chickens can basically live on any poor soil and are cheap as shit to keep, and produce both meat and eggs. Watermelon grows like a fucking weed and can provide you with clean water, tons of nutrients, and lots of carbs.
Even potatoes require at least decent soil. Chicken and Watermelon is a fucking life hack.
But... Brits are limeys, and Germans are krauts, because they eat limes and saurkraut respectively. Many cultures and peoples are nicknamed by the foods they eat, so it just seems odd when calling someone a limey isn't bad, but calling them a watermelon is.
Like, I get the "coconut"/"Oreo" reference being insulting, because while it's a food label, it's specifically mocking the fact they're "only their color on the outside, but white inside", denying their racial identity, there's a thread of logic to taking offense there, but for the ones that are just "they eat these foods", well, I'm sure all the kiwis in NZ would be outraged to hear us note their favorite fruit.
I can't get over how liking fried chicken and watermelons is considered this grave insult in the US.
Consider it an continued hating on Southern culture. Media and lefties will always take shots at the South.

Chicken and watermelon are op and need a nerf as it breaks the farming meta
The fact that I can't farm it in Stardew Valley is a crime.
As far as stereotypes go, it's as benign as it gets.
Asians being good at math and martial arts is a big one. Both are a hard sell as anything besides a compliment let's be real
Its also stolen, because like most black stereotypes its just Southerner shit that they feel entitled to.
Leave it to blacks to even steal their "racist stereotypes."
