"I'm Han Solo, captain of the Millennium Falcon and the only actor whose career isn't destroyed by this movie."
Other than Ford & James Earl Jones (who had a decent career pre-Star Wars) nobody else had much of a career after the original trilogy. Mark's voice acting career didn't really start until the 90s and he barely did any live action anybody watched.
In the prequels, what non-established actors had a career after it?
I'm saying you can't apply that to the prequels because all the major actors that weren't weren't CGI / masked were established actors.
Between making a New Hope and Attack of the Clones Star Wars and George Lucas got famous. Then they could hire all these well-known actors. Perhaps other actors knew it was a kiss of death to perform. Perhaps Lucas knew and didn't want to do that. Perhaps they just preferred having reliably good actors in their movie.

I looked at Attack of the Clones.
The major characters other than Hayden Christiansen are established actors. (Which kind of makes sense; they needed a boy)
That's the thing with Star Wars- other than Ford if you weren't established before you were basically never heard from again.
