I'm not a legal expert but if someone puts on armor and identifies as St. George, can they slay this dragon creature without going to prison ?

What are the laws governing mythological fights ?

PS: bonus points if the son turns out to be St. George

Not even a Saint can legally slay a mythical creature without a tag. You'll have to check with the local Fish and Game to see how to get one.
