So in 1995, some humorist put out The Politically Correct Dictionary and Handbook. Here's some suggestions for the terms listed in the article:

Fireman - Fireperson
Housewife - Domestic incarceration survivor

Hell, let's have the alphabet of political correctness. These have all been used outside the book:
